Product description
Lactase is a kind of lactose hydrolase extracted from Aspergillus oryzae by microfiltration, ultrafiltration and vacuum freeze-drying. At normal concentration, 74% lactose can be hydrolyzed within 72 hours. Soluble in water, water solution is a clear colorless liquid.
Conditions of Use:
Effective temperature: 37-55℃; 38-40℃ (most suitable)
Effective pH: 4.5-5.5; 5.0 (most suitable)
Dosage: For the preparation of milk powder, it is recommended to add 20-25g milk powder for 1Kg when the active dosage is 10,000 ALU/g.

Function
1.Its main function is to hydrolyze lactose to glucose and galactose.
2.Galactose oligomeric galactose is produced by the transglucoside of lactase.
Application
It is mainly used in dairy industry to convert lactose with low sweetness and low solubility into sweet monosaccharide with larger solubility. It reduces the possibility of lactose crystallization in ice cream, condensed milk and evaporated milk, and increases the sweetness.
