What is Polydextrose?

Polydextrose is a synthetic polymer of glucose. It is a soluble fiber and a low-calorie bulking agent commonly used in the food industry. Chemically, it is produced by the random polymerization of dextrose (glucose), with small amounts of sorbitol and citric acid or phosphoric acid as catalysts. It was developed in the 1960s and has since become a popular ingredient in low-calorie, sugar-free, and high-fiber foods.
