Craftsmanship: How China Red Is Made

 
China Red is a Gongfu Dianhong black tea refined with precise control of temperature and moisture.
 
1. Picking — Only spring shoots of Mengku large-leaf tea, **one bud with one leaf are harvested. This is more tender than the one-bud-two-leaf standard of ordinary Dianhong, and is the reason for its fine golden tips.
2. Withering— Natural and trough withering slowly removes excess moisture, reduces grassy notes and unlocks natural floral aroma while making the leaves pliable.
3. Rolling — Rolled with light–heavy–light pressure to break leaf cells and release the juices, forming the signature tight, slender needle strips; clumps are broken apart and sieved to minimize broken pieces.
4. Oxidation (core step) — Oxidized under controlled temperature and humidity, mildly and evenly. Craftsmen watch the leaves in real time: enough oxidation for a bright golden liquor, but not so much that the aroma turns flat or cooked.
5. Two-stage drying — A fast high-temperature firing stops oxidation and locks in aroma, followed by a slow, low-temperature bake to deepen sweetness and protect the golden tips. Fierce high-heat drying would destroy the delicate floral-fruity notes.
6. Refining & sorting — Winnowed, sieved and hand-sorted to remove hard stems, old leaves and scorched pieces, then blended to stabilize aroma and taste batch to batch.
After full brewing, the leaves open into a glossy reddish brown, stretched out completely, feeling soft and springy, with no hard stems or scorched fragments — tangible proof of quality raw materials and precise fermentation.
