Chemical properties of Ethyl 2-methylbutyrate
Colorless oily liquid with strong aroma of apple skin, pineapple skin and unripe plum skin. Boiling point 133℃, melting point -99℃. Soluble in ethanol and propylene glycol, miscible in most non-volatile oils, very difficult to dissolve in water. Natural products exist in apples, wine, brandy, strawberries, melons and so on.
Uses of ethyl 2-methylbutyrate
(1)It can be used as edible flavor. Mainly used in the preparation of apples, strawberries, grapes, raspberries, mangoes and other tropical fruit flavor.
(2)It can also be used in baked food, frozen dairy products, pudding.
(3) It can also be used as raw material for organic synthesis, paper treatment agent, softener for fiber industry, and softener for animal glue.

(4)Ethyl 2-methylbutyrate is mainly used as a solvent and is widely used in chemical laboratories and industrial production.
(5)In organic synthesis, it can be used as a reaction solvent or extraction solvent.
Production method of ethyl 2-methylbutyrate
Ethyl 2-methylbutyrate is usually prepared by esterification. A common method is to esterify methanol and 2-methylbutyric acid to produce methyl 2-methylbutyrate, and then react methyl 2-methylbutyrate with ethanol by acid-catalyzed reaction to obtain ethyl 2-methylbutyrate.
